Thanks for sharing as I needed to know how to make the cookie wafers for ice cream sandwiches; I make my own vanilla by cranking the old fashioned way and the neighbors love it; but I wanted to get into ice cream sandwiches that I can modify because I can't take cane sugar so i opt for xylitol; Cheers!

These are fantastic. I really like that they come out crispy and stay that way. I can't figure out how they can be crispy and yet not break when pushing into the ice cream. Thanks very much.

James, it's fine to use either table salt or kosher (coarse) salt in this recipe, which is why Peter gives specific quantities for both. I have used both with equal success in his pizza dough. Usually in baking, table salt is used because it's finer grained and dissolves quicker. The crystals of coarse salt are larger (which is why it's great for sprinkling on food as you can easily grab it with your fingertips) and so it takes up more space/volume. As a general rule, the volumetric quantity of table salt is usually about half that of coarse salt. But by weight they would be equal.

I don't understand Peter's salt directions. How much, and of which type of salt did you use? What's the difference between the two types?

Love this list, and I know I'll be referring to it many times in the future! Many of them are our favorites as well. I would add the Inkheart trilogy by Catherine Funke to the list. Elena and I are on the last book, and it's such a rich, detailed story.

Amanda - Bookitis, I love that diagnosis! Hopefully there's no cure. Please don't overestimate my girls - they're not above potty humor, see Exhibit A. While Captain Underpants may not be their cup (or toilet mug for Oakley) of tea, I don't think they're the target audience. And, really, isn't any book a great book if it gets kids to read? To make an easy transition to chapter books, I'd recommend trying some longer picture books, such as Bill Peet's, and then some shorter chapter books, such as The Magic Tree House series. Our first full-length chapter books were Charlotte's Web followed by Stuart Little. Let me know how it goes and happy reading!

Great list! We love many of these already and will enjoy giving the others a try. I also love Lucy Maud Montgomery's books on Anne Shirley - the ones the movie "Anne of Green Gables" came from - of course - the books are the best!

Jenn- thanks for sharing. We also have a severe case of bookitis at our house. It was almost shameful when we moved how many boxes were labelled "children's books". You've named some of our favorites and some that I'm putting in cue for us to check out. Admittedly, I'm a little interested in reading "captain underpants" but mostly because that's what we call our boys when they run around in their skivvies. I attempted to read a chapter book to Pax in the late last summer, but he lost interest without pictures quickly- I'm wondering which chapter books you started with for your girls. I feel like he might be ready to try again. I love to read aloud, so I hope so!!
